Usually the Red River Valley “run” is well under way around this time in August; in the hope that the weather won’t change its mind, we’re speculating in futures. Artist Schaeffer, conditioned to small patches of Eastern wheat—say enough to make a few batches of biscuits—was amazed by the endless golden seas of Midwestern grain. One day, in the fields, Schaeffer wondered where everybody’s lunch was coming from, and an airplane appeared, bringing same. Schaeffer now lives in New York, where he regards a loaf of bread with new respect.
